Friday’s here! Or Monday. Or Saturday. Or Thursday. Actually….the way life is nowadays there don’t seem to be any non-busy days left. Ever. And it seems like somebody needs eat everyday too!  Geesh! What is it with these people?!?! And if your life is anything like mine, most days everyone needs to eat dinner at a different time–and somehow ALL of those times are exactly when you are going to be out of the house picking up some family member from some ultra important thing somewhere else!

Enter the family hero:  Mr. Slow Cooker.

This appliance really is a gal’s (or dude I suppose) best friend. Through the years I have tried close to 52 billion crock pot recipes.  Some are keepers…some are frightening. Some….some very special ones….actually get requested by all kinds of picky family members.  This recipe I’m going to share with you is one of those.  Another happy thing about this one? It’s sneaky.  You see….my kids HATE sweet potatoes. Truly. My spouse isn’t always super thrilled about them either.  Yet…when I tell them how I added carrots and apples to this dish (and I don’t lie….I just sort of verbally omit ingredients) they all rave about how sweet and yummy it is.  Just sayin’.  I might be the sneaky crockpot queen.  So try it out with your yam-hating crew and let me know how it went!!!

6 chicken breasts cut into fourths
1 stick melted butter
3/4 c brown sugar
2 peeled sweet potatoes cut into chunks
1/2 bag baby carrots halved
3 apples (I use granny smith if I have them) peeled and cut into chunkssalt and pepper to taste

Put chicken, potatoes, carrots and apples into crock pot. Mix butter with sugar until dissolved–add salt and pepper.  Pour over chicken mix.  Cook on low 6 hours.  I serve it over rice…but it’s pretty good on its own!
