Ok. Want a REALLY good dessert recipe that will make you the star of every backyard BBQ this side of the Mississippi?  We gotcha covered.  The best part about this one is that it’s really pretty easy!
Wait–actually the best part is that they are SOOOOOOOO amazing.
No, the best part is that when you tell people you used real lemons they will compare you to Martha Stewart (for her cooking abilities only!).
Actually–the best part is eating one with a hot cup of coffee first thing in the morning.
Wait–the best part might be all of the above.  Try them and tell us what your best part is….but tell us quickly so you can get seconds before they are all gone!

(Oh….another great thing?  If you pop a few blueberries on top of each bar as they are cooling, gently press them in a bit, then dust the sugar over them…they will work super well for a 4th of July gathering! So maybe the best part is they are patriotic?)

Base
1 c butter at room temp
2 c unbleached flour
1/2 c white sugar

Filling
4 eggs-whisked
1/3 c unbleached flour
1 1/2 c sugar
1/2 c fresh lemon juice

Topping
1 c powdered sugar
blueberries (optional)

Mix ingredients for base together and pat down into a greased 9×13 pan.
Bake base 20 min in a 350 degree oven.
Meanwhile, mix together the other ingredients.
When the base is done, pour the filling on top and bake for another 18-20 minutes.  Take them out even though they aren’t completely firm–they will get more solid as they cool.
After they have cooled a bit press blueberries in if desired.
Sift powdered sugar over the top, cut into squares, arrange on cute serving tray,  and prepare to be attacked by lemon-loving masses.
