Of course I did some adapting and tweaking (certainly not to be confused with twerking) and ended up with this pot full of yumminess that both kids and hubby have seconds on.

Only 5 ingredients and a crock pot and you’re on your way to the perfect answer to that whiney question, “What are we eating tonight?”  And one more small remark….my kids hate sweet potatoes. With a passion. But somehow, when I put them in here and call them “yams”, everything changes.  I don’t get it…but I’ll take it.

6-8 boneless skinless chicken breasts
2 sweet potatoes peeled and cut into chunks
1/2 bag baby carrots
1 stick of butter (melted)
1/3 c brown sugar
salt and pepper to taste (no, these don’t count as official ingredients so it’s still 5)

Put sweet potatoes in crock pot. Layer chicken on top and spread carrots over the chicken. Mix the rest of the stuff together super well and pour over everything in the pot. Cook on low 6-8 hours. You can add your chicken frozen…just add an hour of cooking time. Before you serve mix it all up in the crock pot…the chicken will kind of break apart. If you’re feeling fancy you can serve it in a bowl over rice or egg noodles…but we kinda like it plain too. Let us know if you try it and how you like it!
